1/2 cup butter
1/2 cup creamy peanut butter
1 cup (organic) sugar
1 egg 1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup quick-cooking oats
1 tsp baking soda
1/4 teapoon salt
1 cup (16oz) semi-sweet chocolate chips
In a mixing bowl, cream butter, peanut butter and sugars; beat in egg and
vanilla. Combine the flour oats, baking soda and salt. Add to the creamed
mixture and mix well. Stir in the chocolate chips. Drop by rounded
teaspoonfuls onto un-greased baking sheets. Bake at 350* for 10-12
minutes or until lightly browned. Remove to a wire rack to cool.
Yield: about 3 dozen.

How funny -- we both posted about oatmeal chocolate chip cookies today (only mine don't have any peanut butter)! I'll have to give these a try sometime soon :o)
